Italian Wedding Soup Supper

Italian Wedding Soup Supper Meal


Italian Wedding SKilletIngredients

  • 2 cups small pasta shells
  • 1/2 pound boneless skinless chicken breasts, cut into 3/4-inch cubes
  • 2 tablespoons olive oil, divided
  • 1 medium onion, chopped
  • 1 medium carrot, finely chopped
  • 1 celery rib, chopped
  • 1 package (12 ounces) frozen fully cooked Mr. Meatballs Italian Wedding Soup meatballs, thawed
  • 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1 cup reduced-sodium chicken broth
  • 2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 3/4 cup shredded Asiago cheese


  1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute chicken in 1 tablespoon oil until no longer pink; remove and keep warm.
  2. In the same skillet, saute the onion, carrot and celery in remaining oil until tender. Add the meatballs, soup, spinach, broth, thyme, salt, pepper and reserved chicken; cover and cook for 4-6 minutes or until heated through.
  3. Drain pasta; stir into skillet. Sprinkle with cheese. Yield: 6 servings.

Gnocchi are a thick soft Italian dumpling made with or without filling.   It works great as a side or part of main dish.  At Mr. Meatball we feature Potato Gnocchi.

  • 1 package (16 ounces) potato gnocchi
  • 1 pound ground chicken
  • 1/2 cup chopped onion
  • 2 tablespoons olive oil
  • 1 jar (26 ounces) spaghetti sauce
  • 1/4 teaspoon salt
  • 1/4 to 1/2 teaspoon dried oregano
  • Shredded Parmesan cheese,
  1. Cook gnocchi according to package directions. Meanwhile, in a large skillet, cook chicken and onion in oil over medium heat until chicken is no longer pink; drain if necessary. Stir in the spaghetti sauce, salt and oregano; cook for 5-10 minutes or until heated through.
  2. Drain gnocchi; gently stir into skillet. Garnish servings with cheese if desired. Yield: 4 servings.

12 large fresh stuffing mushrooms
Fresh Basil

Preheat open to 375 F

Remove stems and guts of the mushroom
Brush wth olive oil inside and out

Brown Meatballs

Place half of a Mr. Meatball Meatball that has been heated and browned evenly into each mushroom

Place mushroom and meatball into a backing dish.
Cover with Mr. Meatball Sauce
Top with Shreddd Mozzarella Cheese,
Bake for until cheese is brown and bubbly
remove and and serve topped with chopped basil

Spinach-Ravioli Lasagna


1 (6-oz.) package fresh baby spinach, thoroughly washed
1/3 cup pesto sauce
1 (15-oz.) jar Alfredo sauce
1/4 cup vegetable broth*
1  frozen cheese-filled ravioli (do not thaw)
1 cup (4 oz.) shredded Italian six-cheese blend
Garnishes: chopped fresh basil, paprika

1. Preheat oven to 375°. Chop spinach, and toss with pesto in a medium bowl.

2. Combine Alfredo sauce and vegetable broth. Spoon one-third of alfredo sauce mixture (about 1/2 cup) into a lightly greased 2.2-qt. or 11- x 7-inch baking dish. Top with half of spinach mixture. Arrange half of ravioli in a single layer over spinach mixture. Repeat layers once. Top with remaining Alfredo sauce.

3. Bake at 375° for 30 minutes. Remove from oven, and sprinkle with shredded cheese. Bake 5 minutes or until hot and bubbly. Garnish, if desired.
